From Hue head down to Hoi An, an old riverside trading town with a nearby beach. The old streets of Hoi An are lined with boutique shops, restaurants and ancient temples, great for wandering around and exploring on foot.

Spend a night in a tribal village and get off the beaten track in one of the most beautiful corners of Vietnam.

From Hoi An, fly to Saigon and discover the real Saigon and enjoy an overnight cruise on the Mekong Delta.

Enjoy a buffet lunch while passing through picturesque areas such as the Mat Quy and Am Islets. Visit Tien Ong Cave (sensible footwear required) and then continue to Cua Van Fishing Village, the oldest and largest fishing village in Halong Bay.

The village is reached via smaller boats that each takes a maximum of four persons.

After returning to the boat in the late afternoon there is the opportunity to watch and take part in, a traditional Vietnamese cooking demonstration conducted by the energetic chef.

As the boat cruises slowly to its mooring points, enjoy a relaxing massage or a sunset drink on the terrace deck.

Just before dinner is served there will be a presentation about Halong Bay

Day 4: Halong Bay - Hanoi

Early risers may join a Tai Chi class on the open deck. A smaller boat then takes guests to a natural white sandy stretch of beach with crystal clear water.

Climb to a hill top for a last view over Halong Bay before returning to the boat for the slow cruise back to Halong City.

Enjoy a buffet brunch while passing picturesque areas including Ti Top Island, Tam Cung Cave and Poem Mountain.

Disembark via a smaller boat at Tuan Chau Pier at around 11am for your transfer back to the hotel in Hanoi.

In the afternoon spend time with a renowned expat chef who will open the door into the world of Vietnamese cooking and the local Hanoi food scene.

Daniel Hoyer is an author and chef with a profound passion for Vietnam and the Vietnamese art of food and dining. Daniel will take you to see markets and restaurants away from the tourist areas.

These secret culinary venues are frequented by Vietnamese and expat foodies, and as a result many are not listed in the guide books.

Take a stroll with him and learn from his many years of experience as a chef, culinary instructor and author.

Visit a bustling local market where Daniel will explain how the different ingredients are used in Vietnamese cuisine. There is also the chance to try out some famous Hanoi specialties.

Day 6: Hue

Transfer to the airport for your flight to Hue, the ancient Imperial capital of Vietnam where you will be met and transferred to your chosen hotel in Hue.

Located in the heart of Hue is the Imperial Citadel, a vast complex built in the early 19th century and modelled after the Forbidden City of Beijing. Enjoy a guided tour around the citadel.

Day 8: Hoi An

Discover a completely different side of Vietnam. Head out of Hoi An and stop at 1,000 year old Cham temples and former US and French bases from the independence wars.

Head into the mountains along quiet roads, through dramatic scenery towards the Lao border, home to the Co Tu minority.

Visit one of the few remaining Co Tu woodcarvers and enjoy a home cooked lunch in his stilted house before continuing deep into the mountains, meandering through isolated villages.

Arrive at Bho Hoong, a traditional Co Tu village for an overnight stay. Little has changed in the past hundred years in Bho Hoong and it is the perfect place to relax and enjoy the natural beauty of Central Vietnam.

An easy trek through the village outskirts leads into the surrounding jungle and to rivers, where there's a chance for a refreshing dip.

Enjoy a superb dinner of Co Tu traditional dishes, a traditional dance performance and a chance to interact with the villagers, gaining more insight into their rich culture.

Afterwards, retreat to your stilted Co Tu hut where the serene setting and clear mountain air will lull you to sleep.

Overnight local village. Breakfast included.

Day 9: Hoi An

In the morning, wake up to the sounds of the village coming to life. Enjoy breakfast and a hot cup of coffee as you watch the morning activities of the Co Tu, heading to the fields and preparing the days meals.

In the afternoon descend back down toward the coast, stopping along the way to explore old bases from the American war.

Overnight Hoi An. Breakfast included.

Day 11: Saigon

Transfer to the airport for your flight to Saigon where you will be met and transferred to your chosen hotel.

Saigon teems with energy, activity and motion. Everywhere you look, you see the meeting of traditional and modern life.

Begin with a tour of the historic centre, strolling along Dong Khoi Street. Pass by classic European-style landmarks such as the ornate City Hall (Hotel De Ville), the old Opera House (both may only be viewed from the outside), and pay a quick visit to the neo-Romanesque Notre Dame Cathedral and the Central Post Office.

Afterwards dive into modern history with a tour of the Reunification Palace which has been preserved in its original state, and the original tanks remain on display near the entrance gates.

Continue to the War Remnants Museum and finally, visit the Emperor Of Jade Pagoda, one of Saigon's most interesting pagodas.

In the evening enjoy a cultural performance in the Opera House.

Overnight Saigon. Breakfast included.

Day 12: Mekong Delta

Enjoy an overnight cruise on the Mekong Delta on the Song Xhan.

Begin cruising around 10 am and witness life as it plays out in the Mekong Delta. Before arriving at Sa Dec, stop at various points along the river for a look into some of the cottage industries of the region including a visit to a Cao Dai temple.

Arrive in Sa Dec and stroll to the outdoor market. Visit one of the highlights of the charming town, the ancient house of Huynh Thuy Le, a real-life character in the celebrated novel and film "The Lover" by Marguerite Duras.

Lunch is served on board while cruising towards Can Tho along a narrow canal teeming with life.

Explore the countryside by local rowboat. The last stopover before sunset is at an ancient house (a "Nha Co" in Vietnamese), dating back to the 19th century.

The owner will welcome you and a candlelit dinner is served in this authentic countryside setting. After dinner return on board while the Song Xanh continues its cruise towards the Hau River.

Overnight On Board. All meals included.

Day 13: Mekong Delta - Saigon

Get up early for a visit to Cai Rang Floating Market. Breakfast is served on board while the Song Xanh navigates towards the market among local barges laden with fruit and vegetables.

Cruise towards Victoria Can Tho and disembark at the hotel's private jetty and transfer back to your hotel in Saigon.

Overnight Saigon. Breakfast included.

Day 14: Saigon

Wake up with the locals and soak in the sights and sounds of Saigon in the early morning.

Set off not long after the sun has risen and witness the city slowly waking up around you. Spend some time sipping cafe da, a Vietnamese iced coffee at the outdoor "bird cafe" in one of the city's most attractive parks.

Stroll through to the adjacent park and witness the locals going about their daily exercise routines. Some practise Tai Chi while others jog and challenge each other to games of badminton.

Continue walking to an old dim sum shop, a popular and bustling eatery in the neighbourhood.  After a delicious breakfast, return to your hotel as the locals set off to begin their daily work.

Enjoy the afternoon at leisure or alternatively add on a tour to the Cu Chi Tunnels, made famous as a centre of resistance during the Fench and American wars.
